[dreaming of] summer cocktails

I want to start organizing my blog a little bit better,
and I'm going to start with a [dreaming of] feature.
This feature will highlight things that I'm excited for in the future
and any little spin on that :)

This week's [dreaming of] feature is all about summer cocktails!
I'm turning 21 this Monday, June 20th
so all I can think of is the unlimited amount of summer drink options I'll be able to try
starting Monday and on to the rest of my years at restaurants & bars across the world.

Here are some delicious beverages that are perfect for summer
and that you can make at home:
Enjoy!
 Cucumber Ginger Fizzes
1 1/2 cups vodka
2 English cucumbers; 1 peeled and coarsely copped, 1 left whole
1 lime, cut into 8 wedges
2 bottles (750 mL each) sparkling water
1/2 to 1 cup Ginger Simple Syrup
Put vodka and chopped cucumber in a container.
Refrigerate 1 hour. Strain; discard cucumber.
Regfrigerate, covered, for up to 2 days.
Using a vegetable peeler, shave the remaining cucumber lengthwise
into wide strips, discarding the seeds.
Fill 8 tumblers with ice. Add 3 cucumber strips & 3 tablespoons infused vodka.
Squeeze, then drop a lime wedge into each glass.
Top with sparkling water; stir in 1 to 2 tablespoons syrup.
 Peach Margaritas with Peach Wedges
3 ripe peaches, plus 2 more for garnish
3 tablespoons orange liquer
2 tablespoons sugar
1/4 teaspoon coarse salt
3/4 cup silver tequila
3 tablespoons fresh lemon juice
2 cups bottled peach nectar
8 mint sprigs for garnish
Cook 3 peaches in boiling water for 1 minutes.
Transfer into an ice-water bath to cool & remove peaches.
Peel and halve peaches, remove pits, and slice into wedges.
Toss with orange liqueur, sugar, and salt in a medium bowl. Cover,
and set in a warm spot for about 20 minutes.
Puree peach mixture in a blender until smooth.
Stir in tequila and lemon juice.
Transfer into a pitcher, and stir in peach nectar.
Fill 8 tall glasses with ice, garnish with a mint sprig.
Use the 2 remaining peaches to cut wedges for each glass.
Pour & enjoy.
 Lemon Drops on the Rocks
3 cups vodka
2 1/4 cups fresh lemon juice (from 10-12 lemons)
1/2 cup plus 3 tablespoons superfine sugar
Ice, for serving
Thin lemon slices, halved, for garnish
Combine vodka, lemon juice, and sugar, stirring occasionally 
until sugar dissolves.
Transfer to a pitcher, add lemon slices, and serve.
Watermelon Punch
3 cups seeded watermelon, cut into 1 1/2-inch pieces
1 1/2 cups white vermouth (or any alcohol of your choice--mine's vodka!)
1 1/2 tablespoons superfine sugar
3 cups crushed ice
Place watermelon, vermouth, and sugar in a blender;
process until watermelon has been liquefied--about 10 seconds.
Add ice; process 3 seconds more.
Serve in a chilled glass.
